Upo Recipe with Pork

Pork and Upo is a very hearty and warming soupy dish which is perfect for any day, however dishes like this are perfect on a rainy day.
You may have the tendency to want to spice up this dish with peppers, resist that temptation this dish is perfect with a small amount of seasoning and black and pepper work best.
Kitchen Utensils You Will Need
Here are the basic kitchen utensils you will need when making upo with pork recipe:
- Pan
- Knife
- Cutting Board
- Spoon (for removing seeds in upo/white squash)
- Stove top
Ingredients
- 1/2 kilo pork (diced)
- 2 medium-sized onions
- 1 upo (bottle gourd or white squash)
- 1 head of garlic (about 10 small cloves or 7 large cloves)
- 2 tablespoon oil
- 2 cups of water
- 5 pieces of tomatoes (diced)
- 2 teaspoon of oyster sauce
- Salt and pepper to taste (For salt, start with 1/2 teaspoon and incrementally add if you want it to be saltier.)
Directions

Prepare and Cut Upo
- Peel the Upo, ensure you don't peel too much of the flesh, the Upo is very easy to peel.
- Slice off the bottom and top of Upo. Then divide the Upo in half lengthwise.
- Scoop out the seeds of the Upo, carefully not removing too much of the flesh. Note: Depending on you preference you can leave the seeds if they are tender.
- Chop the Upo in small 1/2-inch cubes.

Prepare and Cut Onions
- Wash the onion under cold water, then cut the onion in half.
- Peel the onion by pulling off the outer layer(s) of each half.
- Chop the onions into approximately 3/8-inch chunks. (Many techniques can be used, but cutting each half into 3/8-inch slices, then changing the direction of the onion by 90 degrees and cutting again is an efficient method of chopping the onion.

Prepare and Cut Garlic
- Separate the garlic cloves and peel the loose outer layers
- Smash one clove at a time with side of large chef's knife.
- Remove outer layer for each smashed clove.
- Finely chop the garlic

Prepare and cut pork and begin cooking
- Cut raw pork on a cutting board into small 3/8 inch chucks and place in a bowl.
- Ensure you wash knife and cutting board with hot soapy water to prevent cross-contamination with future uses. While your pork begins cooking.

Sauté your onion and garlic and brown and cook you pork
- Preheat a large deep skillet or large pot to medium-high heat
- Pour in oil and add garlic and onions, cook for 2-3 minutes to let the garlic and onion infuse into the oil
- Add the pork to your pan and begin browning the meat.
- Once pork is browned slightly add the oyster sauce and stir until the sauces, oil, garlic, onion are all combined well.

Simmering your pork, tomatoes and upo
- Add your upo to the pan
- Add water just covering your upo
- Add tomatoes
- Reduce heat to medium low and begin to simmer your pork and upo.
- Cook for 15 to 30 minutes, you can check your upo for tenderness during the cooking process to determine the correct time.

Serving Suggestions Serve pork and upo with a side of white or brown rice.
